A couple weeks ago we went to a BYOM BBQ at the park. We couldn't decide what to take for us to eat but Andrew remembered an old recipe from his mom for this wonderful sandwich...
4 4oz boneless, skinless breasts, flattened
2 tsp Olive Oil
1 tsp Ground Cumin
1/2 tsp Salt
1/4 tsp Pepper
4 slices Monterey Jack Cheese
4 Hamburger Buns (we used a Kaiser roll)
1/2 lb Ham, thinly sliced
8 slices cooked bacon
4 Tbsp your favorite BBQ Sauce
1. Rub Chicken with olive oil, sprinkle with cumin, salt and pepper. On a grill cook chicken 5 min on each side
2. Place a slice of cheese on bun half. Place bun in toaster oven and toast until cheese is melted.
3. Place chicken on bun and top with ham, bacon and BBQ sauce
YUM!
