Cafe Rio Salad
Creamy tomatillo salad dressing
1 can herdez salsa verde in can
1 cup mayo 1 pckg buttermilk ranch dressing mix
1 tbs. canned jalapenos
1/4 cup fresh cilantro, chopped
1 small can evaporated milk or 1/2 cup evaporated milk
and 1/2 cup buttermilk
blend in blender 1-2 minutes. Refrigerate for a few hours before serving

3 fresh tomatillos, cut into quarters
1 pckg ranch buttermilk dressing mix
1 cup mayonnaise (for a thicker dressing reduce to 1/2 cup and add 1/2 cup sour cream)
1/3 to 1/2 cup buttermilk
1 cup fresh cilantro
2 cloves crushed garlic
1/4 tsp crushed cayenne pepper
combine all ingredients in a blender and refrigerate at least one hour
Cafe Rio Pork
6 lbs pork or a pork roast
1 16 oz. bottle of salsa
1 can coke (not diet)
2 cups brown sugar packed
place pork in crock pot and fill it 1/2 way up the pork with water. Cook on high for 5 hours. Drain off water. Clean fat off pork and shred with forks. Mix together sacue ingredients and put on top of pork, back in crock pot. Cook an additional three hours on high. Leave on low until ready to serve. (my crock pot only requires low for additional three hours and then on keep warm until served)
Lime Cilantro Rice
1 lb. long grain rice (2 1/4 cups)
1 bunch of cilantro
juice of 2 limes
4 cloves of garlic or a little garlic powder
chop garlic and cilantro. Heat 2 tbs of oil in a skillet. add rice and all chopped ingredients. saute 3-5 minutes, stirring frequently. put 4 cups of water and lime juice in rice cooker. add rice mixture to the rice cooker and cook according to cookers directions. if you don't have a cooker, combine rice, water and lime juice in a 3 qt. pot and bring to a boil. then reduce heat and simmer until all the liquid is absorbed by the rice.
Buy uncooked tortillas from Costco. Fry on one side, flip, sprinkle with cheese.
Layer with rice, black or pinto beans, pork, chopped romaine lettuce.
Garnish with pico de gallo, guacamole, fresh cilantro, lime, chip strips.
